It all began behind the bar at a beloved dive Reel’M Inn in Portland, Oregon, during the pandemic. Fresh off a trip to Indianapolis—and inspired by a honky tonk owner I met there—I started experimenting with my own version of hot honey. What began as a side project quickly turned into a spicy obsession.
Years later, back home in Denver, I couldn’t shake the craving—or the calling. I’ve grown up Hatch green chiles—it’s a taste that runs deep and means a lot to me. So when it came time to craft something truly my own, I knew Hatch had to be part of it. Paired with the rich, golden goodness of Bee Squared’s local honey, the result was pure magic.
Mel’s Hot Honey was born out of passion and nostalgia, with one goal: to share the love and put honey on everything. And we’re just getting started.
